There is a lot of heart poured into your morning routine. If you’ve spent any time at Dear Diary Coffee, you already know that every detail of our Central Austin space—from the local art on the walls to our entirely plant-based menu—is chosen with care.

When it comes to our drinks, we take a completely scratch-made approach to specialty coffee. In the industry, people are starting to call this "Fourth Wave coffee." While the Third Wave focused heavily on the technical bean sourcing and precision roasting, Fourth Wave coffee takes those exact high standards and expands them into the culinary world—using scratch-made ingredients, creative mixology, and above all, making the whole experience welcoming rather than exclusive.

For us, it isn't a trendy buzzword; it’s just the most honest way to make a really great cup of coffee. Here is a look inside the mad science and meticulous craft behind our bar.

Weighed and Timed to the Second

You can’t have a great specialty drink without a flawless foundation. We approach our espresso with the discipline of a traditional boutique shop. Our beans (proudly roasted right here in Austin by the women-owned team at Sightseer) are kept on the lighter, more expressive side of the roast spectrum—never scorched, never bitter. Every single shot on our bar is weighed to the tenth of a gram and timed to the second. If the extraction isn’t perfect, we don't serve it.

Flavor Made From Scratch

Where most cafes stop at the espresso machine, we move into the kitchen. Dear Diary is one of the very few coffee shops in Austin that creates its own syrups, spice blends, and creams entirely in-house.

We approach our flavor profiles like chefs. While most of our syrups are carefully cooked on the stove, we use a patient maceration process for our fruit-based flavors. By letting real fruit sit in sugar without high heat, we capture the natural, volatile fruit oils that cooking usually destroys. The result is a vibrant, true-to-life flavor and an incredibly smooth mouthfeel in the final drink.

Crafting everything from scratch also allows us to run a much kinder, lower-waste bar. By making our own syrups in-house, we avoid throwing away dozens of heavy glass bottle pumps every month. Likewise, blending our own custom spices completely eliminates the mountain of single-use plastic containers that manufactured flavorings generate. For us, minimizing our environmental footprint isn't a marketing gimmick—it’s just the natural byproduct of choosing real ingredients over factory-made shortcuts.

Reimagining the Plant-Based Experience

Because we are an entirely plant-based shop, we refuse to treat dairy-free options as an afterthought. We don't just buy a carton of generic creamer off a distributor truck—we craft our own rich, house vegan cream.

We also believe in giving you a genuine canvas for flavor, which is why we curate a massive selection of plant milks. Whether your go-to is classic oat, almond, or soy, or you want to experiment with the rich texture of coconut or the distinct, buttery notes of pistachio, we have you covered.

Gourmet Mixology (and the Secret to Our Frappes)

We love straight espresso, but we also love the sheer joy of a creative beverage. Our signature lattes are complex, beautiful, and uniquely delicious.

That culinary curiosity extends all the way to our frozen menu. Walk into a standard cafe, and a frappe is usually just coffee, sugar, and ice spun in a blender—resulting in a watery, separated mess within five minutes. At Dear Diary, we keep our freezer stocked with real bananas. We use frozen bananas instead of ice as the binding agent for our frappes. The natural sugars reduce the need for artificial syrups, and the banana’s starch creates a rich, velvety, impossibly smooth texture that ice simply cannot replicate.
